Meatloaf meatballs Recipe

Ingredients
- 1/4 c. freshly grated Parmesan
- 1/4 c. plus 2 tbsp. ketchup
- 1 lb. ground beef
- Kosher salt
- 1/2 c. chopped carrots
- 1 c. chopped parsley
- 2 garlic cloves
- 1/2 lb. ground pork
- 1/2 c. chopped onion
- 3/4 c. panko bread crumbs
- 1 tbsp. brown sugar
- 1 egg
- 1/2 c. chopped celery
- Freshly ground black pepper
Directions
- Up to the temperature of 400°F, preheat the oven. Combine brown sugar with ¼ cup ketchup in a small bowl and set it aside.
- Add onion, celery, garlic and carrots in a food processor bowl and pulse it 4-5 times. After this, add ¾ cup of parsley to this mixture and until well combined, pulse it.
- Combine the vegetables with cheese, bread crumbs, ½ tbsp pepper, 1 tbsp salt, 2 tbsp’s of remaining ketchup and egg in a large mixing bowl and till well combined, mix it. After this, add pork and beef to this. Mix till well combined.
- Form 1 1/2 “meatballs with your hands and place them in a skillet in a way like meatballs are touching. Take the ketchup glaze and brush the meatballs with it and till browned, bake them for about 20 minutes. Serve after garnishing with parsley.
