Chicken with Avocado Salsa

Ingredients
• Freshly ground black pepper
• 1 tsp. lime zest
• Extra-virgin olive oil
• 1 tbsp. lime juice
• 2 large, ripe avocados
• Maldon sea salt
• 1/4 c. chopped parsley
• 1 c. cherry tomatoes
• 2 chicken
• Kosher salt
• 1 c. diced red onion
Directions
1. In a zip lock bag, place the chicken. Make use of a wallet to pound the chicken and season it with pepper and salt.
2. Toss tomatoes, onions, lime juice, lime zest, ½ tbsp sea salt and parsley together in a large mixing bowl. Toss in avocado.
3. Take a large cast iron and put it over high heat. Add 1 tbsp olive oil in pan when it is almost smoking and cook chicken on each side for 4 minutes. Transfer it to a plate.
4. With the avocado salsa, serve the chicken. Garnish with sprinkle of sea salt, drizzle of olive oil and parsley.
Chicken Fried Rice
Yield: 4 servings prep: 0:05 total time: 0:30
Ingredients
• 1 tsp. white vinegar
• Kosher salt
• 1 lb. flank steak
• 1 onion
• 3 tbsp. soy sauce
• 2 garlic cloves
• 3 c. leftover white rice
• Freshly ground black pepper
• 1 tbsp. cornstarch
• 5 tsp. sugar
• 1 tsp. grated ginger
• 1 c. peas
• Vegetable oil
• 2 Eggs
• 1 tsp. sesame oil
Directions
1. Rinse chicken and pat it dry with paper towel. Season it with ½ tbsp pepper, 1 tbsp salt and 1 tbsp sugar in a medium bowl. Till well coated, toss it with cornstarch and then set it aside.
2. Heat 1 tbsp vegetable oil over medium heat in a large skillet along with beaten eggs. Use a tuber spatula to scramble it and then to a side dish, transfer it. Add drizzle of oil after turning the heat to high and fry chicken in it till crispy and then transfer it to side dish.
3. Heat 2 tbsp’s vegetable oil, ginger, garlic and onions over medium heat in the same skillet and for about 3-4 minutes, cook it. Add 2 tbsp’s water and peas in it and till peas are tender, cook it. To this, add the cooked rice. For about 3-4 minutes, cook it. Stir in white vinegar, soy sauce, remaining sugar, 1 tbsp black pepper and sesame oil. Add back the eggs and chicken and serve them immediately after tossing them.
